White absinthe is a spirit made from the distillation of wormwood (Artemisia absinthium) as the main raw material. It has a distinctive bitter taste and aroma, and often has a green or clear appearance. White absinthe was very popular in Europe in the late 19th and early 20th centuries and was considered to have medicinal and drinking value. The process of making white absinthe involves steeping absinthe and other herbs in alcohol, then distilling it, and possibly adding some ingredients for flavoring. Its taste is usually complex, with bitter, sweet and herbal flavors, and the alcohol content is usually high. Historically, white absinthe has been controversial for its alleged hallucinogenic effects, but in fact, its hallucinogenic effects are primarily due to its high alcohol content rather than the chemical components of absinthe. Modern white absinthe generally does not contain large amounts of toxic substances and has been legalized and regulated. White absinthe can be drunk neat or used as one of the base liquors for making cocktails, such as the traditional "Absinthe Green Fairy".
