Acetylated distarch adipate (E1422), is a starch that is treated with acetic anhydride and adipic acid anhydride to resist high temperatures. It is used in foods as a bulking agent, stabilizer and a thickener.
Modified starch means that in order to improve the performance of starch and expand its application range, physical, chemical or enzymatic treatment is used to introduce new functional groups on starch molecules or change the size of starch molecules and the nature of starch granules, so as to change the natural characteristics of starch (e.g., pasting temperature, thermal viscosity and its stability, freezing and thawing stability, gelation, film-forming properties, transparency, etc.) and make it more suitable for the requirements of certain applications. This kind of starch after secondary processing, change the nature of the starch collectively known as modified starch. Compared with ordinary starch, modified starch has the characteristics of low pasting temperature, high transparency, high solubility, strong gelatinization, good freeze-thaw stability, low viscosity, low and high temperature resistance, and therefore it is widely used in the food field.
