Trypsin is a serine protease from the pancreas that specifically hydrolyzes peptides on the carboxyl side of arginine and lysine residues. It is formed as a zymogen (trypsinogen) in the pancreas and is secreted into the duodenum when the pancreas is activated by cholecystokinin. It is then converted to its active form by enterokinase in the digestive system, where it supports digestion by degrading proteins into smaller peptides. Trypsin has a variety of applications in biotechnology and is often used in tissue culture to resuspend adherent cells, to separate cells from tissues, to generate peptides for proteomic studies, and in a variety of food-related processes. Early activation of trypsin in the pancreas can lead to pancreatitis.
