Impingement freezers feature high velocity airflow technology for rapid IQF (individual quick freezing) of food products. Impingement is the process of directing high-velocity air-jets at the top and the bottom of food product. Impingement cold air-jets remove the static surface boundary layer that surrounds the product resulting in a very fast freezing, small ice crystals and thus high product quality. Impingement freezing applies to products with a high surface area-to-weight ratio and ideally freeze hamburger patties and other flat products. Impingement technology also applies to crust freezing.

An impact freezer is a high-efficiency freezing device used to quickly freeze food or other items. Through the freezing effect of high-speed airflow, it quickly takes away the heat from the surface of the item to achieve the effect of rapid freezing. Impulse freezers generate high-speed refrigerated airflow through one or more high-speed airflow nozzles. The food or other items to be frozen pass through the freezing area and are directly hit by the high-speed freezing airflow. This allows heat to be quickly removed from the surface of the item, bringing it to freezing temperatures quickly. Due to the impact of the high-speed airflow, an ice layer is formed on the surface of the item to take away the heat, thereby realizing rapid freezing. The high-efficiency freezing effect of the impact freezer makes the inside of the item also freeze quickly. The advantage of the impingement freezer is that it can achieve rapid freezing in a relatively short period of time and the freezing effect is uniform.
