The product is submerged in a freezing liquid, allowing it to quickly contact the cryogenic surface of the liquid. The extremely low temperature of the liquid (usually tens of degrees Celsius to hundreds of degrees Celsius below zero) allows the sample to quickly reach the required freezing temperature. Due to the rapid freezing effect of the liquid, an ice layer is formed on the surface of the sample, which quickly takes away the heat, so that the inside of the sample is also rapidly frozen, thereby realizing rapid freezing.
